Welcoming the Spring Equinox: A Fresh Start & The Sweetest Lemon Blueberry Cookies ♥


The Spring Equinox is here, and I've recently started down a new spiritual path and wanted to honor this time of year in some way—even if it’s something small, like baking a batch of cookies and letting myself dream about the season ahead.

For me, spring feels like a fresh breath of air. It’s a time to step into new energy and start romanticizing life again. This year, I wanted to keep my Equinox tradition simple, so I baked the easiest (and most perfect) lemon blueberry cookies.

Because let’s be real—sometimes the best kind of magic is just a store-bought cake mix and a little extra love.




🍋🌸 My Lemon Blueberry Equinox Cookies


Ingredients:

  • 1 box of lemon cake mix
  • 1 cup fresh blueberries
  • 2 eggs
  • ⅓ cup vegetable oil
  • Powdered sugar for rolling

Instructions:

  1. Preheat oven to 350°F.
  2. In a bowl, mix the cake mix, eggs, and oil until smooth.
  3. Gently fold in the blueberries.
  4. Roll the dough into balls, coat in powdered sugar, and place on a baking sheet.
  5. Bake for 10-12 minutes or until the edges are slightly golden.

That’s it! So easy, so soft and chewy, and the perfect balance of sweet & tangy.

📖 More slow, cozy reading nights – Less scrolling, more getting lost in a good book.

🏡 Thrifting with purpose – Picking pieces that feel intentional and make my space more me.

🌸 Softness over self-criticism – Speaking to myself like I would a friend or my daughter.


Spring is a season of rebirth and renewal, and this year, I just want to let myself enjoy it.
